Caprese Crostini (Canapes)
Description
The preparation begins by slicing a baguette into half-inch thick rounds that are lightly brushed with extra virgin olive oil and toasted to create a crisp base. Each toast is topped with slices of fresh mozzarella and Roma tomato, then seasoned with salt and pepper before baking again until the cheese softens and melts. To finish, basil is thinly sliced and tossed in a mix of balsamic vinegar and olive oil, which is spooned onto each crostini after baking. The result is a warm crostini with a creamy melted cheese layer, fresh tomato juiciness, and a bright, herby finish from the marinated basil and balsamic. This snack offers contrasting textures and simple but layered flavors characteristic of Caprese ingredients.
Ingredients
- 1 baguette sliced into 1/2" thick rings, long
- olive oil to brush the baguette
- 2-3 Roma tomato sliced into 1/4" thick rings
- mozzarella cheese sliced into 1/4" thick (buy cheese the width of your baguette, fresh
- basil thinly sliced, fresh
- 1 Tbsp balsamic vinegar
- 1 Tbsp extra virgin olive oil
- salt to taste
- black pepper to taste
Instructions
- Slice bread and brush both sides lightly with extra virgin olive oil. Bake 5 minutes at 350˚F to lightly toast it (toasting the bread keeps the bread from getting moist from the cheese).
- Top with a slice of mozzarella and a slice of tomato. Sprinkle the tops with salt and pepper and bake at 350˚F for 8-10 minutes or until cheese is melted.
- A few minutes before the crostini are finished baking, in a small ramekin, mix together 1 Tbsp balsamic vinegar and 1 Tbsp extra virgin olive oil until well combined. Toss in the sliced fresh basil and stir gently. Top each crostini with the marinated basil.
