Description
This appetizer uses fresh ingredients threaded onto toothpicks to create portable miniature salads. Cherry tomatoes provide sweet juiciness, folded basil leaves add herbal aroma, and small mozzarella balls offer a mild creamy texture. Just before serving, a homemade balsamic vinegar reduction is drizzled to lend a concentrated tangy-sweet note that complements the other ingredients.
The skewers can be served lying flat or arranged to stand upright for presentation. Leftover skewers store well refrigerated. Buying pre-made balsamic glaze is an option for convenience, though homemade reduction is typically more economical. Variations include adding cured meats like salami or prosciutto, tortellini, or fried gnocchi to the skewers.
Ingredients
- 16-18 cherry tomato
- 16-18 basil fresh leaves
- 1 (12-oz) tub mozzarella marinated, balls
- balsamic vinegar reduction homemade
- 16-18 Toothpicks
Instructions
- Add 1 cherry tomato to a toothpick.
- Fold a basil leaf in half or into thirds. Place on the toothpick below the cherry tomato.
- Add a mozzarella ball on the end. If you would like to serve the appetizers vertically (so the toothpick is sitting on your platter straight up and down), place the mozzarella ball on the platter and move it around so that it looks like it's in the most stable position and won't roll much. Then pierce the toothpick into the top.
- Just before serving, drizzle with homemade balsamic reduction. Serve with the remaining balsamic reduction on the side for guests to add more if they like.
- Store any leftovers in the fridge!
