  • 1 cup cherry tomato halved, or cocktail tomatoes
  • For the marinade
  • 1 tablespoon lemon juice
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 garlic minced, medium clove
  • salt Kosher salt and freshly ground
  • black pepper Kosher salt and freshly ground
  • 12 mozzarella cheese halved, small balls
  • ½ cup basil thinly sliced leaves

Instructions

  1. Place the zucchini and tomatoes in a large bowl.
  2. Make the marinade. Pulse the ingredients in a food processor until the garlic is smooth.
  3. Pour the marinade over the zucchini noodles and tomatoes, and toss to combine. Place in the refrigerator to marinate for at least 10 minutes.
  4. Add the mozzarella and basil to the zucchini noodles, toss to combine, and serve.
