Description
This recipe starts by creating a caramel sauce on the stovetop using butter, dark brown sugar, and cinnamon, with dark rum added optionally for extra depth. Once the sauce bubbles and smoothes, banana slices are folded into the caramel. The base of the casserole consists of thick-cut challah bread pieces arranged in a dish, layered with the caramel-banana mixture, then topped with remaining bread.
A custard made from eggs, milk, half and half, vanilla extract, and salt is whisked and poured over the bread layers, soaking them thoroughly by pressing down with a spoon. Ingredients
- 8 tablespoons butter unsalted, 1 stick
- 1 cup dark brown sugar packed
- 1/4 teaspoon cinnamon
- 3 Tablespoons dark rum or spiced rum, optional
- 3 banana sliced, medium ripe
- 1 challah bread cut in 1/2 inch pieces, loaf
- 8 egg large
- 1 cup milk
- 1 cup half and half fat-free
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup walnuts toasted and chopped
Instructions
- Melt butter in a large skillet over medium-low heat. Add brown sugar, cinnamon, and rum (optional) and cook until blended and smooth. Remove from heat just as the mix begins to bubble and fold in bananas.
- Put half of the diced bread in a 9 x 13 inch casserole dish. Top with caramel banana mixture. Top with remaining bread.
- In a large mixing bowl, whisk together eggs, milk, half and half, vanilla and salt. Pour over casserole ensuring all pieces are soaked in the egg mixture by pressing down on the bread pieces with a large spoon. Top with walnuts.
- Cover and refrigerate overnight or at least 4 hours.
- Uncover baking dish and bake at 350F° for 40-50 minutes or until egg is set and top is light golden brown.
