Ingredients

  • 2/3 cup butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/4 cup water
  • 2 ½ cups bittersweet chocolate chips divided
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour please see the note below
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 11 ounce bag caramels
  • 1 ½ tablespoons heavy cream

Instructions

  1. Preheat oven to 325F. Grease or parchment-line a 9×13-inch metal pan. Set aside.
  2. In a large saucepan, combine butter, sugars, and water.
  3. Bring to a boil, stirring regularly.
  4. Remove pan from heat.
  5. Whisk in 1 ¾ cups chocolate chips until melted and well-combined.
  6. Add eggs and vanilla.
  7. Whisk until well-combined.
  8. Add flour, salt, and baking soda. Whisk in just until combined. Don’t overmix.
  9. Stir in the remaining 3/4 cup chocolate chips
  10. Pour the batter into the prepared pan, smoothing as needed.
  11. In a microwave-safe bowl, melt the caramels with the heavy cream in 30-second intervals, stirring after each interval, until smooth.
  12. Use a knife to swirl 2/3 of the the caramel into the batter. Set the remaining caramel aside.
  13. Bake for about 30-40 minutes, or until a toothpick inserted in the center comes out with a few fudgy crumbs.
  14. Let the brownies cool to room temperature before cutting and serving.
  15. Drizzle the remaining caramel over the brownies just before serving.
