Description
The casserole starts with cutting French bread into cubes spread evenly in a baking pan. A batter made from beaten eggs, pumpkin puree, caramel-flavored coffee creamer, vanilla, brown sugar, and pumpkin pie spice is poured over the bread to saturate each piece thoroughly. This mixture infuses the bread with creamy, spiced pumpkin flavors reminiscent of traditional autumnal desserts.
A streusel topping made from flour, brown sugar, white sugar, pumpkin pie spice, and cold butter is crumbled over the soaked bread. This layer bakes to a crisp, sweet crust contrasting the tender interior of the casserole. Baking at 350°F for about 45 to 55 minutes results in a golden brown top with the custard-like texture beneath.
Once baked, the casserole can be drizzled with caramel topping for added sweetness. It serves well as a make-ahead dish for family breakfasts or gatherings, delivering rich pumpkin flavor combined with the satisfying texture of French toast and streusel.

Ingredients
- ½ French bread 8 oz, cut into cubes, a loaf
- 6 egg lightly beaten
- 1 1/2 cups coffee creamer International Delight Simply Pure Caramel flavor
- 1 cup pumpkin not Pumpkin Pie filling, puree
- 1 tsp vanilla extract
- 1/2 cup brown sugar packed
- 2 tsp pumpkin pie spice
Streusel topping:
- ¼ cup all-purpose flour
- ¼ cup brown sugar packed
- ¼ cup white sugar
- ¼ teaspoon pumpkin pie spice
- 3 Tablespoons butter cold
Instructions
- Preheat oven to 350 degrees. Grease a 13x9 inch baking pan and fill with the bread cubes, spreading evenly.
- In a medium sized bowl, whisk together the eggs, pumpkin puree, creamer, vanilla, brown sugar, and pumpkin pie spice. Pour egg mixture over the top of bread cubes, insuring that all pieces of bread are saturated.
- Mix together streusel ingredients until crumbly, or pulse ingredients using a food processor (this is my preferred method). Sprinkle over the top of casserole.
- Bake in preheated oven for 45-55 minutes until top is golden brown. Remove from oven and drizzle with caramel topping, if desired. Enjoy!
Notes
- If top browns too fast, cover casserole loosely with foil during baking to prevent burning.
