Caramelized Apple German Pancake
Description
Caramelized Apple German Pancake starts by tossing peeled, thin apple slices with cinnamon, ginger, nutmeg, and allspice alongside granulated sugar. Butter is melted in a deep oven-safe skillet, then brown sugar is sprinkled on top to create a caramel base. The spiced apples are layered evenly over the sugar mixture and briefly baked in the oven.
A batter of flour, salt, milk, eggs, and vanilla extract is whisked smooth and poured over the caramelized apples. Baking continues until the batter is set in the center and the edges turn golden brown. The pancake puffs in the oven, enclosing the tender apple topping beneath a soft, delicate crust.
This pancake blends warm spices and caramel notes with the tender texture of baked eggs and flour. Using baking apples that hold shape, like Granny Smith or Honeycrisp, ensures the apples retain some texture without becoming mushy. The dish can be served warm, showcasing its combination of soft cake and caramel-coated apple slices.
Substitutions in spices and milk types are possible according to preference. The recipe advises lightly adjusting salt if using unsalted butter and notes the option of plant-based milks. Cooking times yield a pancake with a set center and lightly browned edges indicating doneness.
