Description

The Caramelized Onion Jam recipe starts with slicing extra large onions thinly, then gently sautéing them in avocado or a neutral vegetable oil over medium heat until they reduce and take on a golden-brown color, which takes about 80 to 90 minutes. Alongside the onions, fresh thyme and optionally brown sugar enrich the flavor profile, while a small amount of sea salt enhances sweetness. Just before finishing, a balsamic vinegar glaze is stirred in to add mild acidity and depth. The result is a sweet, savory, and soft jam with intensely caramelized notes.

This jam works well as a spread for sandwiches, burgers, or cheese boards, adding a deep savory sweetness that balances salty and fatty elements. It can also be used as an accompaniment to roasted meats or vegetables.

  • 1 tablespoon avocado oil or neutral vegetable oil
  • 4 extra large onion sliced, white or yellow
  • 1 teaspoon thyme fresh (or use slightly less if using dried, leaves
  • 1 teaspoon brown sugar optional
  • teaspoon salt sea salt
  • 1 tablespoon balsamic vinegar glaze

Instructions

  1. Use a food processor with the slicing attachment to slice the onions.
  2. Heat a Dutch oven or heavy bottomed pot over medium heat.
  3. Add in oil. Add in the onions and gently sauté over medium heat, until the onions reduce, stirring occasionally.
  4. It will take about 1 hour 20 minutes, or close to 90 minutes. Don't rush.
  5. Add in thyme, rosemary, brown sugar, sea salt, and balsamic near the end of the cooking process, when the onions have reduced significantly and are brown in colour.
  6. Store in a sterilized glass jar in the fridge for up to 2 weeks. Makes about 1 pint.
