  • 8 ounces corn tortilla chips
  • 3 1/2 cups Oaxaca cheese shredded
  • 1 cup Mexican rice
  • 1 cup queso fresco crumbled
  • 1 cup corn kernels fresh
  • 1/2 cup Mexican crema
  • 1 bunch cilantro chopped leaves
  • 2 radish thinly sliced
  • 1 jalapeño thinly sliced

Instructions

  1. Make recipe for carne asada from link above. Once cooked, chop into bite sized pieces.
  2. To assemble: Spread tortilla chips onto a baking sheet in a single layer and top with half the shredded cheese. Top cheese with cubed carne asada. Sprinkle with remaining shredded cheese.
  3. Set broiler to high heat and place baking sheet under broiler for about 2 minutes or until cheese just melts.
  4. Remove nachos from oven and even top with remaining ingredients. Serve.
