Description
This recipe starts by pan-searing seasoned Carne Asada beef strips with fresh lime juice to build flavor and tenderize. Meanwhile, diced red peppers, onions, and cilantro are prepared, and a quick corn salsa is made by sautéing frozen corn with peppers and onion, then adding cilantro just before finishing to keep a crunchy texture. The coconut lime crema blends coconut yogurt, sriracha, lime juice, light mayonnaise, chile lime seasoning, and cilantro for a cooling yet spicy sauce.
The tacos are assembled by warming tortillas (preferably charred over flame for flavor) and layering with the cooked beef, corn salsa, shredded lettuce, sliced avocado, cheese mix, and crema. Additional garnishes such as jalapeños, salsa, guacamole, mango salsa, crushed chips, and queso can customize each taco.
For best texture and flavor, store cooked meat and vegetables separately in airtight containers and reheat gently before assembling. Cutting steak against the grain ensures tenderness, and quick searing prevents toughness. The recipe's components make it suitable for casual meals where each diner can individually top their tacos.

- 2 lime
- 8 whole wheat tortillas Carb Savvy brand, Trader Joe’s
- ½ cup corn frozen
- ½ red pepper
- ¼ cup white onion
- ¼ cup cilantro fresh
- lime zest of 1
- ½ cup CHEESE MIX Mexican style, lite, Trader Joe’s brand
- ½ avocado
- 1 cup lettuce shredded
For the coconut lime crema
- ½ cup coconut yogurt Two Good brand
- 2 tsp sriracha
- ¼ cup lime juice fresh
- 1 tablespoon mayonnaise light
- 1 tsp chile lime seasoning
- 2 tablespoons cilantro
For garnish
- lettuce
- lime
- jalapeño

- Chips crushed
- Queso
- guacamole
Instructions
- Heat a skillet to medium heat and spray with cooking spray. Dice the carne asada and put it into the pan. Then, squeeze out the juice of two limes over the meat.
- While the beef is heating up, wash and dice your bell pepper, onion, and cilantro. I love to use a pizza cutter to dice fresh herbs. It's so easy!
- In another skillet, add your frozen corn, peppers, and onion. Sautee until corn is warmed. Then, add fresh cilantro. This is going to be our corn salsa. Do not over cook the vegetables. They should be crunchy.
- Next, let’s make the crema. In a small mixing bowl, add yogurt, sriracha, lime juice, mayo, and chile lime seasoning. Add fresh cilantro to taste. Then, mix together until a crema texture is achieved.
- Prior to assembling the street tacos, slice avocado and warm tortillas. Heat on a gas stove / open flame for a few minutes on each side, or on a skillet. You can also microwave them, but keep in mind you will not achieve the charred flavor. I broil them in the oven on a wire rack.
- Then, add the cheese to the warm tortillas.
- Spread the crema on the tortillas, add carne asada, fresh salsa, and any other toppings you like.
- Serve fresh and enjoy!

- Store cooked meat and vegetables separately in airtight containers and consume within 5 days.
- Slice steak against the grain to ensure tender pieces.
- A quick sear on each side of the beef avoids overcooking and keeps it juicy.
- Warm tortillas over an open flame for best flavor and texture, or use a skillet or microwave if needed.
