Ingredients
- 8 white corn tortilla toasted, brand: La Tortilla Factory
- 8 wheat tortilla toasted, brand: La Tortilla Factory
- 1/2 carnitas leftover, approx. 10 oz cooked
- 8 egg fried
- 1 cup black beans rinsed and drained, low sodium
- 1/2 cup cilantro chopped
- avocado sliced, optional
Lime Crema
- 5.3 oz Greek yogurt plain, fat free
- 3 tbsp lime juice
- salt to taste
- black pepper to taste
Instructions
- Whisk together Lime Crema ingredients until smooth. Set aside.
- Heat leftover carnitas in a skillet until heated through.
- Assemble breakfast tacos by layering black beans, carnitas, avocado slices and fried eggs on top of toasted tortillas. Top with cilantro and lime crema.
