Carolina mustard sauce is a tangy and flavorful condiment that hails from the southern United States, particularly the Carolinas. Made primarily from yellow mustard, apple cider vinegar, and a blend of spices, this sauce offers a delightful balance of sweetness and acidity, making it a perfect accompaniment for grilled or smoked meats, especially pork. Ingredients
- 2 teaspoon dried rosemary
- 1 teaspoon celery seeds
- 2 chicken bouillon cubes crumbled
- 1 tablespoon dry mustard
- 2 teaspoon onion powder
- 2 teaspoon garlic powder
- ¾ cup sugar
- 1½ teaspoon kosher salt
- 1 teaspoon black pepper
- 2 cups yellow mustard
- 3 tablespoon ketchup
- ⅔ cup apple cider vinegar
- ½ teaspoon hot sauce ie, Tabasco, Louisiana, Frank's
Instructions
- Place the rosemary, celery seeds, bouillon cubes, mustard, onion powder, and garlic powder in a spice grinder and grind until very fine (this is optional, but it helps to make a smooth sauce).
- In a bowl, add the remaining ingredients and then add the ground spices. Stir until combined and smooth.
- Transfer to a saucepan and bring to a simmer. Simmer for 5 minutes, stirring often.
- Let the sauce cool completely and then transfer to a jar (or container) with a tight-fitting lid. Store in the refrigerator for up to 3 weeks. Serve at room temperature or warmed.
