Carolina Mustard Sauce

Carolina mustard sauce is a tangy and flavorful condiment that hails from the southern United States, particularly the Carolinas. Made primarily from yellow mustard, apple cider vinegar, and a blend of spices, this sauce offers a delightful balance of sweetness and acidity, making it a perfect accompaniment for grilled or smoked meats, especially pork. Its vibrant yellow color and zesty taste add a unique twist to classic barbecue dishes, enhancing the flavor profile of any meal. It keeps in the fridge for up to 3 weeks!

Ingredients

  • 2 teaspoon dried rosemary
  • 1 teaspoon celery seeds
  • 2 chicken bouillon cubes crumbled
  • 1 tablespoon dry mustard
  • 2 teaspoon onion powder
  • 2 teaspoon garlic powder
  • ¾ cup sugar
  • teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 cups yellow mustard
  • 3 tablespoon ketchup
  • cup apple cider vinegar
  • ½ teaspoon hot sauce ie, Tabasco, Louisiana, Frank's

Instructions

  1. Place the rosemary, celery seeds, bouillon cubes, mustard, onion powder, and garlic powder in a spice grinder and grind until very fine (this is optional, but it helps to make a smooth sauce).
  2. In a bowl, add the remaining ingredients and then add the ground spices. Stir until combined and smooth.
  3. Transfer to a saucepan and bring to a simmer. Simmer for 5 minutes, stirring often.
  4. Let the sauce cool completely and then transfer to a jar (or container) with a tight-fitting lid. Store in the refrigerator for up to 3 weeks. Serve at room temperature or warmed.
