Carrot Bread
Description
This Carrot Bread starts by whisking together sugar, vegetable oil, eggs, vanilla extract, baking soda, salt, and a blend of warm spices including ground cinnamon, ginger, nutmeg, and cloves. Vigorously mixed until combined, all-purpose flour is folded in followed by shredded carrot, finely chopped walnuts, and sweetened shredded coconut, incorporating texture and sweetness.
Baked in a lined 9x5 loaf pan at 350°F for about 60 to 70 minutes, the bread rises and cooks through with a soft crumb and moist interior. After cooling, it’s generously frosted with a smooth cream cheese frosting made by processing cream cheese, unsalted butter, powdered sugar, vanilla, and a pinch of salt until creamy. The frosting adds richness and balances the spices of the bread.
This loaf is suitable as an accompaniment to coffee or tea or as a sweet snack. The combination of nuts and coconut gives added chew and crunch, complementing the spiced carrot base.
