Carrot Cake Baked Oatmeal

Carrot Cake Baked Oatmeal combines rolled oats with shredded carrots, pineapple, walnuts, raisins, and warm spices baked into a moist casserole. Topped with a maple cream cheese glaze, it echoes the flavors of traditional carrot cake while offering a hearty, textured breakfast or snack option with a subtle sweetness and moist crumb.

Description

This dish blends old-fashioned rolled oats with carrot, strained pineapple, chopped walnuts, raisins, flaxseed, cinnamon, ground ginger, salt, vanilla, maple syrup, and almond milk. The mixture is stirred together and baked at 375°F until set yet slightly soft inside. The pineapple and carrots add moisture and fruitiness, while walnuts and raisins contribute texture and sweetness. Spices like cinnamon and ginger provide warmth.

The recipe finishes with a drizzle of maple cream cheese frosting made from whipped cream cheese, maple syrup, almond milk, and vanilla, enhancing the carrot cake resemblance and adding richness. The dish can be served warm and works well for breakfast or a nutrient-dense snack.

Notes suggest reheating covered in the oven to preserve moisture or microwaving individual portions. The glaze is optional and can be omitted or made dairy-free by using vegan cream cheese. Stored in the refrigerator, the baked oatmeal keeps for several days.

Ingredients

Servings
  • 2 cups rolled oats old fashioned
  • 1 ¾ cups almond milk or any milk of choice, unsweetened
  • ½ cup carrot I usually use the pre-shredded bagged kind, grated
  • ½ cup pineapple strained, canned, crushed in juice
  • cup maple syrup
  • ¼ cup walnuts plus more for topping, chopped
  • ¼ cup raisins
  • 1 Tablespoon Flaxseed ground
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon ground ginger
  • ½ teaspoon salt sea salt

Maple Cream Cheese Frosting

  • ¼ cup cream cheese whipped
  • 1 Tablespoon maple syrup
  • 1 Tablespoon almond milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F and line a 8x8 baking dish with parchment paper or spray with non-stick cooking spray.
  2. Add all ingredients for the baked oatmeal in a large bowl and stir until combined.
  3. Pour into prepared baking dish and bake for 50-60 minutes. Check it around 45 minutes and if the top is getting too brown, cover with foil for the remaining time. The baked oatmeal will still be a little soft to the touch but should be cooked through and not jiggly in the middle.
  4. While the oatmeal is baking, prepare the glaze by whisking together the whipped cream cheese, maple syrup, almond milk and vanilla in a small bowl.
  5. Remove baked oatmeal from the oven and let sit for 5 minutes to cool before serving. Drizzle some of the glaze over each portion when serving.

Notes

  • Reheat the whole baked oatmeal covered with foil in a 350°F oven for about 20 minutes.
  • Individual portions reheat well in a 350°F oven for 5-10 minutes or briefly in the microwave.
  • The glaze is optional and can be omitted or made vegan by substituting with vegan cream cheese.
  • Store leftovers in an airtight container in the refrigerator for up to five days.
