  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/3 cup vegetable oil or canola oil
  • 2 egg large
  • 2 teaspoons vanilla extract
  • 1/4 cup pineapple drained, crushed
  • 1 carrot grated (about 1/3 to 1/2 cup)
  • 1/2 cup white chocolate chips or more as desired

Instructions

  1. Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.
  2. In a large mixing bowl, add the flour, sugar, baking powder, salt, cinnamon, nutmeg, and ginger. Whisk until combined.
  3. Add the oil, eggs, and vanilla to the dry ingredients. Beat with a hand mixer for 2 minutes until well combined. Scrape down the sides and bottom of the bowl to avoid patches of dry ingredients.
  4. Stir in the pineapple, grated carrot, and white chocolate chips.
  5. Use a 1 Tablespoon cookie scoop, drop the batter onto your prepared cookie sheets about 2 inches apart.
  6. Bake for 8-12 minutes, until the cookies are cracked on top and edges are golden brown.
  7. Cool on the cookie sheets for 2 minutes before transferring to the cooling racks to cool completely.
