Ingredients
- 1 cup rolled oats
- ½ cup shredded carrots
- ¼ cup raisins
- ¼ cup chopped almonds
- ½ teaspoon cinnamon
- ⅛ teaspoon cloves
- ⅛ teaspoon nutmeg
- ⅓ cup almond butter
- ¼ cup maple syrup
Instructions
- In a mixing bowl, mix together oats, shredded carrots, almonds, raisins, and spices.
- Add almond butter and maple syrup and mix together thoroughly.
- Place mixture in the refrigerator for one hour.
- Shape into one-inch bites.
Notes
- Add ½ - 1 cup of dates. If using them, place all the ingredients in a food processor and pulse until blended completely. Then refrigerate and roll into balls.
- Swap the chopped nuts for chopped pecans
- You can also use cashew butter, sunflower butter, or even peanut butter if you don't mind a more nutty flavor.
- Use honey or agave syrup or even a sugar free alternative.
- Store these energy balls in the refrigerator in an airtight container in a single layer for for up to 4-5 days.
