  • 1 1/4 cups water
  • 1/2 cup carrot grated
  • 1/2 cup rolled oats GF oats, old-fashioned
  • 1/3 cup pineapple crushed
  • 2 tablespoons golden raisins
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup almond milk unsweetened
  • 2 tablespoons brown sugar
  • 1 tablespoon Toasted coconut flakes
  • 1 tablespoon pecans chopped

Instructions

  1. Place the water and carrots in a medium saucepan and bring to a simmer over medium heat. Simmer for 2-3 minutes to soften the carrots.
  2. Stir in the oats, pineapple, raisins, cinnamon, and nutmeg and bring to a boil. Boil for 1 minute, then reduce the heat to medium and simmer until it begins to thicken, about 5 minutes.
  3. Once most of the liquid is absorbed, stir in the milk and simmer for 1-2 minutes, or until slightly thickened and creamy.
  4. Remove from heat and stir in the brown sugar, coconut flakes, and pecans.
