  • 1 tablespoon neutral cooking oil generic cooking oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 3 teaspoons ginger minced
  • 8 carrot 750g, chopped, medium
  • 4 cups vegetable stock 1 litre
  • black pepper freshly ground

Instructions

  1. Heat the oil in a large pot or sauté pan. Add the onion and cook for 3 minutes or until softened but not browned.
  2. Stir in the garlic, ginger and carrots and cook, stirring often, for 2 minutes.
  3. Add the stock, bring to the boil, then reduce the heat, cover and simmer for 15 minutes or until the carrot are soft.
  4. Transfer to a blender (or use an immersion blender) and whiz until smooth. Return the carrot soup to the pot and reheat.
