Description
Carrot Ginger Soup combines diced yellow onion sautéed in neutral cooking oil with minced garlic and fresh ginger before adding chopped carrots. The mixture is cooked briefly to develop flavors, then vegetable stock is added. The soup simmers until the carrots are soft enough to blend into a smooth purée. Cooking starts with softening the onion without browning, then gently cooking the aromatic garlic and ginger with carrots to build a layered flavor. Ingredients
- 1 tablespoon neutral cooking oil generic cooking oil
- 1 yellow onion diced
- 3 cloves garlic minced
- 3 teaspoons ginger minced
- 8 carrot 750g, chopped, medium
- 4 cups vegetable stock 1 litre
- black pepper freshly ground
Instructions
- Heat the oil in a large pot or sauté pan. Add the onion and cook for 3 minutes or until softened but not browned.
- Stir in the garlic, ginger and carrots and cook, stirring often, for 2 minutes.
- Add the stock, bring to the boil, then reduce the heat, cover and simmer for 15 minutes or until the carrot are soft.
- Transfer to a blender (or use an immersion blender) and whiz until smooth. Return the carrot soup to the pot and reheat.
