Carrot Oatmeal Breakfast Cookies

Carrot Oatmeal Breakfast Cookies combine grated carrot and rolled oats with warm spices like cinnamon and nutmeg for a lightly sweetened, textured cookie. Sweetened with brown sugar and maple syrup, these cookies have a moist crumb and a subtle vegetable note. A simple glaze made from Greek yogurt and powdered sugar adds a creamy touch when drizzled over the warm cookies. These are suited for a nutritious snack or a quick breakfast treat.

Description

The Carrot Oatmeal Breakfast Cookies feature a mix of coconut oil, brown sugar, and maple syrup creamed together, providing moisture and sweetness. Grated carrot adds natural sweetness and moisture while contributing a unique texture. A combination of all-purpose and whole wheat pastry flour, along with oats, gives the cookies body and chew. Baking powder and baking soda help them rise slightly, while cinnamon and nutmeg offer warm spice notes.

Baked until lightly browned and matte, these cookies have a tender yet slightly firm texture. The optional Greek yogurt glaze is made by blending yogurt with powdered sugar and vanilla, thinned if needed, to provide a smooth drizzle that softens the cookie tops as they cool.

These cookies are practical for an on-the-go breakfast or a wholesome snack anytime. The use of natural sweeteners and oats adds a breakfast appeal, and the carrot inclusion is a subtle way to include vegetables.
