Carrot Raisin Salad

  • 4 cups carrot shredded
  • 1 cup raisins
  • ¼ cup yogurt plain, Greek
  • ¼ cup mayonnaise
  • 2 Tablespoons honey
  • 1 Tablespoon lemon juice
  • pinch salt

Instructions

  1. If you haven't already, peel and shred your carrots.
  2. Add shredded carrots and raisins to a medium mixing bowl. Add greek yogurt, mayo, honey, lemon juice and salt.
  3. Stir to combine until everything is coated with the dressing.

Notes

  • Storage: Store carrot raisin salad in an airtight container in the fridge for 3-4 days. For the best texture, keep the dressing separate and mix before serving.
