Carrot Salad
Description
The salad begins by combining peeled, shredded carrots with drained pineapple tidbits and raisins. The dressing is prepared separately by whisking mayonnaise with lemon juice, reserved pineapple juice, and granulated sugar, creating a mildly sweet and tangy accompaniment. The dressing is poured over the carrot mixture and stirred to combine evenly.
After mixing, the salad is refrigerated for at least 30 minutes, which helps the flavors meld and softens the texture slightly. The resulting salad has a creamy consistency paired with the natural crunch of fresh carrots and bursts of sweetness from fruit components.
It works well as a side dish at meals or a chilled snack. The mixture can be prepared in advance to enhance flavor development. Adjusting mayonnaise type can alter calorie content while maintaining taste.
Ingredients
- 4 cups carrot peeled and shredded
- 8 ounce can pineapple tidbits
- 3/4 cup raisins
- 1 cup mayonnaise
- 2 teaspoons lemon juice
- 2 teaspoons pineapple juice from the can
- 1 tablespoon granulated sugar
Instructions
- Drain the pineapple, but reserve 2 teaspoons of the juice for the dressing.
- Place the carrots, pineapple and raisins in a large bowl.
- In a small bowl, whisk together the mayonnaise, lemon juice, pineapple juice and sugar.
- Pour the dressing into the bowl with the carrot mixture. Stir until well combined.
- Cover and refrigerator for at least 30 minutes, then serve.
Notes
- The salad improves in flavor when made ahead and kept refrigerated in an airtight container, remaining fresh for up to three days.
- Using light mayonnaise can reduce calories without significantly changing the dressing’s texture.
- Freshly shredding carrots offers better flavor, but pre-shredded carrots can be a quicker substitute when necessary.
