  • 2 teaspoons pineapple juice from the can

Instructions

  1. Drain the pineapple, but reserve 2 teaspoons of the juice for the dressing.
  2. Place the carrots, pineapple and raisins in a large bowl.
  3. In a small bowl, whisk together the mayonnaise, lemon juice, pineapple juice and sugar.
  4. Pour the dressing into the bowl with the carrot mixture. Stir until well combined.
  5. Cover and refrigerator for at least 30 minutes, then serve.

Notes

  • The salad improves in flavor when made ahead and kept refrigerated in an airtight container, remaining fresh for up to three days.
  • Using light mayonnaise can reduce calories without significantly changing the dressing’s texture.
