Carrot Smoothie

A healthy carrot smoothie that tastes just like carrot cake! Made with pineapple, banana, walnuts, and yummy carrot cake spices.

Ingredients

  • 1 cup carrot steamed and cooled if you do not have a high-power blender or to make extra smooth for kids, chopped
  • ½ cup banana frozen, sliced
  • ½ cup yogurt plain, Greek
  • ½ cup cashew milk unsweetened vanilla almond milk, or milk of your choice, unsweetened, vanilla
  • ¼ cup pineapple frozen, diced
  • 2 tablespoons walnuts toasted
  • 1 tablespoon coconut optional, flaked
  • ¼ teaspoon ground cinnamon
  • Pinch nutmeg
  • carrot for topping, shredded carrots; crushed walnuts

Instructions

  1. Add all of the ingredients to your blender: carrots, banana, Greek yogurt, cashew milk, pineapple, walnuts, coconut (if using), cinnamon, and nutmeg.
  2. Blend until smooth. Enjoy immediately, topped with additional shredded carrots, coconut, and/or crushed walnuts as desired.

Notes

  • TO STORE: Smoothie is best enjoyed immediately upon blending. However, leftovers may be stored for up to 1 day in the fridge, if needed.
