Description
This salad uses a base of coleslaw mix and chopped cauliflower tossed in a dressing of Miracle Whip and sugar for sweetness and tang. After refrigerating for a couple of hours to allow flavors to develop and vegetables to soften slightly, it's finished just before serving by folding in crunchy cashews and crispy cooked bacon pieces. Ingredients
- 1/3 c. sugar
- 2 c. Miracle Whip
- 1/2 cauliflower cut up, head
- 1 coleslaw 16 oz bag
- 1 c. cashews
- 1/2 c. Bacon chopped
Instructions
- Mix sugar and Miracle Whip. Add coleslaw and cauliflower. Refrigerate for 2 hours or until serving.
- Right before serving add cashews and bacon.
Notes
- Prepare the salad up to 24 hours ahead and refrigerate; add cashews and bacon just before serving for best texture.
- Use mayonnaise as a substitute for Miracle Whip if desired, but note the dressing will be less sweet and tangy.
