Cast Iron Skillet Chicken Breast
Description
The recipe starts by coating a cast iron skillet with avocado or olive oil and preheating over medium heat. Chicken breasts are dried and lightly pounded to even thickness to promote even cooking and tenderness. Seasoned simply with sea salt, black pepper, garlic powder, and onion powder, they’re seared on each side for 6 to 7 minutes or until reaching an internal temperature of 165°F, ensuring safety and juiciness.
After cooking, the heat is turned off and butter is added to melt in the residual heat. Spoon-basting the breasts with melted butter helps keep the surface moist and adds a mild buttery flavor. Fresh herbs used as a garnish add a hint of freshness and color to the finished dish. The result is a piece of chicken breast with a slightly crisp outer layer from pan searing, retaining a tender and juicy inside.
Suitable for a main course or meal addition, these skillet chicken breasts can be served alongside vegetables, grains, or salads. The method is adaptable, allowing seasoning variations if desired, but caution is advised to avoid overcooking to prevent dryness. Leftovers store well refrigerated for several days.
Ingredients
- 2 tbsp avocado oil or olive oil
- 3 chicken breast
- ½ tsp salt sea salt
- ½ tsp black pepper
- ½ tsp garlic powder
- pinch onion powder
- 2 tbsp butter or ghee
- fresh herbs to garnish
Instructions
- First, add avocado oil (or olive oil) to a large cast iron skillet over medium heat.
- Pat chicken dry. Bang a few times with meat mallet to tenderize. Season on both sides with sea salt, pepper, garlic powder and onion powder.
- Once oil is hot, place chicken breasts in skillet. Cook for 6 to 7 minutes on each side. Cook until internal temperature reaches 165 degrees Fahrenheit.
- Once chicken is cooked, turn heat off. Add butter to the hot skillet. Use a spoon to spoon the melted butter over chicken breasts.
- Finally, remove chicken to a plate. Serve with chopped fresh herbs on top.
Notes
- This recipe uses boneless, skinless chicken breasts for consistent cooking time.
- Bone-in breasts require longer cooking times to reach safe internal temperature.
- Use a meat thermometer to ensure chicken reaches 165°F internal temperature for safety.
- Do not overcook chicken to maintain tenderness and moisture.
- Seasonings can be varied according to preference beyond the stated spices.
- Store leftover cooked chicken in refrigerator up to 4 days.
