Cauliflower Alfredo Sauce

The Cauliflower Alfredo Sauce uses steamed cauliflower blended with almond milk, garlic, nutritional yeast, olive oil, and seasonings to create a creamy sauce. Its texture mirrors traditional alfredo sauce with a smooth, thick consistency suitable for pasta, roasted vegetables, or veggie noodles. The nutritional yeast provides a subtle cheesy flavor, making this sauce a dairy-free alternative to classic alfredo.

Description

This Cauliflower Alfredo Sauce combines steamed cauliflower with almond milk and roasted garlic, blended until smooth to achieve a creamy sauce base. Nutritional yeast contributes a mild cheesiness while olive oil adds richness. Seasoned with salt and pepper, the sauce can be adjusted for consistency by varying the amount of almond milk added during blending.

The sauce’s velvety texture and subtle savory flavor make it a versatile topping for pasta or vegetables. It’s prepared by steaming cauliflower florets and blending them with the other ingredients until smooth, creating a sauce with a thickness similar to traditional alfredo.

Stored in an airtight container, the sauce keeps for several days in the fridge. It may thicken when chilled, but thinning it with a splash of almond milk when reheating restores its ideal consistency.

Ingredients

Servings
  • 1 1/2 cups cauliflower steamed florets
  • ⅓ - ½ cup almond milk unsweetened
  • 2 cloves garlic minced, roasted or 1 clove raw
  • 1 Tablespoon nutritional yeast
  • 1 Tablespoon olive oil or avocado oil
  • 1/2 teaspoon salt sea salt
  • 1/4 teaspoon black pepper ground

Instructions

  1. Steam cauliflower: Steam cauliflower if you haven’t already.
  2. Blend: Place steamed cauliflower, 1/3 cup almond milk, roasted garlic, nutritional yeast, oil, salt and pepper into a blender. Blend until smooth. You want the sauce to be kind of thick (like traditional alfredo sauce), but not too thick so add a bit more milk, if needed. Taste and season with additional salt and pepper, if needed.
  3. Enjoy: Use a sauce for pasta, roasted veggies or veggie noodles.
  4. Store: Sauce will keep for 3-5 days in an airtight container in the fridge. It may thicken as it sits so feel free to add a little more almond milk when reheating.
