  • 8 cups cauliflower about 2-3 lbs, florets
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 1/2 cup cheddar cheese sharp, shredded and divided
  • 1 1/3 cup gruyere cheese or additional cheddar, or swiss cheese, shredded

Instructions

  1. Preheat oven to 400°F.
  2. Rinse cauliflower and cut into bite-sized florets. Toss with olive oil.
  3. Place on a baking sheet and roast 15-20 minutes or until fork tender.
  4. While cauliflower is roasting, melt butter in a saucepan. Once melted, whisk in flour until smooth and let cook for 1 minute. Add the milk a little at a time while whisking until smooth.
  5. Cook over medium heat until thick and bubbly. Stir in salt and black pepper. Add in 1 cup guyere cheese and half the cheddar cheese. Whisk until smooth.
  6. Toss cheese mixture with roasted cauliflower and place in a 2 qt casserole dish. Top with remaining cheese and bake 20-25 minutes or until heated through.
  7. Then Broil 1-2 minutes or until browned.
