Ingredients

Servings
  • 1 head cauliflower
  • 3 egg
  • 1 cup cheddar cheese shredded or mozzarella cheese
  • 1 teaspoon oregano
  • ½ teaspoon garlic powder
  • teaspoon each of salt and pepper
  • cheese additional shredded for cheesier topping

Instructions

  1. Preheat oven to 425 degrees F
  2. Cut cauliflower head into smaller pieces and pulse in a food processor. You want it to resemble rice.
  3. Place in a microwave safe bowl, cover and microwave for 10 minutes.
  4. Squeeze out as much water as possible using a cheesecloth.
  5. Add all other ingredients to a large bowl and blend well.
  6. Add cooked cauliflower to other mixed ingredients and mix well.
  7. Line 2 baking sheets with parchment paper
  8. Divide the cauliflower mixture in half and spread the baking sheets. I make mine into a rectangle shape. You want it to be thin.
  9. Bake at 425 degrees F for 25 minutes.
  10. If you'd like it a little extra cheesy, sprinkle with additional cheese and bake again until the cheese is melted.

Notes

  • Nutritional information doesn't include the extra added cheese.
  • You can also bake the cauliflower in the oven for 20 minutes at 375 degrees F.
  • Be sure to squeeze all the water out of the cauliflower.  Up to a cup of liquid is expected.
