Ingredients
- 2 Tbsp sesame oil divided
- 1 lb chicken breast cut into 1'' pieces, boneless skinless
- 2 c. pea frozen
- 2 c. carrot frozen
- 2 cloves garlic
- 2 egg beaten
- 2 Tbsp soy sauce low sodium
- 1 head cauliflower riced
- 1 green onion minced
Instructions
- Heat 1 Tbsp sesame oil over medium low heat. Add chicken, garlic and carrots and peas. Cook until chicken is cooked through and carrots and peas are tender.
- Add the rest of the sesame oil and rice cauliflower. Stir fry. Watch this carefully so the cauliflower does not get mushy.
- Make well in the middle of the cauliflower mixture. Turn heat down and add eggs. Stir gently until eggs are fluffy and cooked. Stir in soy sauce.
- Top with green onions and serve immediately.
Notes
- For a heartier dish, mix in one cup of cooked brown rice along with the riced cauliflower during stir-frying.
- Adjust soy sauce amount to taste to control saltiness.
