Cauliflower Chicken Fried Rice

Cauliflower Chicken Fried Rice combines riced cauliflower with tender pieces of chicken breast, peas, carrots, and scrambled eggs for a lower-carb alternative to traditional fried rice. The sesame oil and soy sauce provide a savory backbone while garlic adds aroma. This stir-fry is cooked quickly over medium heat to keep the cauliflower from turning mushy and eggs fluffy, resulting in a dish with contrasting textures. It's a practical way to enjoy a satisfying meal with vegetables and protein, served hot, typically garnished with minced green onions.

Description

Cauliflower Chicken Fried Rice blends riced cauliflower with bite-sized chicken breast, frozen peas and carrots, and scrambled eggs. The cooking begins by sautéing the chicken with garlic and vegetables in sesame oil until tender and cooked through. More sesame oil is added before stir-frying the cauliflower rice carefully to maintain its texture. A well is made in the center to cook eggs gently into soft, fluffy curds. Soy sauce is then stirred in to add umami saltiness. Minced green onions are sprinkled on top before serving.

This dish balances the fresh crispness of vegetables with the meaty protein and light egg binding. Using riced cauliflower creates a grain-free base that absorbs the flavors while keeping the overall dish light. The sesame oil imparts a subtle nutty aroma that complements the chicken and soy.

Serve immediately as a main course for lunch or dinner. It pairs well with simple side dishes or can stand alone as a low-carb meal option. The green onions on top add a bright finish and mild bite.

For added texture and heft, you can include cooked brown rice with the cauliflower rice. Adding rice provides a more traditional fried rice feel and increases the meal's satiety without complicating preparation.

Ingredients

Servings
  • 2 Tbsp sesame oil divided
  • 1 lb chicken breast cut into 1'' pieces, boneless skinless
  • 2 c. pea frozen
  • 2 c. carrot frozen
  • 2 cloves garlic
  • 2 egg beaten
  • 2 Tbsp soy sauce low sodium
  • 1 head cauliflower riced
  • 1 green onion minced

Instructions

  1. Heat 1 Tbsp sesame oil over medium low heat. Add chicken, garlic and carrots and peas. Cook until chicken is cooked through and carrots and peas are tender.
  2. Add the rest of the sesame oil and rice cauliflower. Stir fry. Watch this carefully so the cauliflower does not get mushy.
  3. Make well in the middle of the cauliflower mixture. Turn heat down and add eggs. Stir gently until eggs are fluffy and cooked. Stir in soy sauce.
  4. Top with green onions and serve immediately.

Notes

  • For a heartier dish, mix in one cup of cooked brown rice along with the riced cauliflower during stir-frying.
  • Adjust soy sauce amount to taste to control saltiness.
  • Cook eggs gently in the center to keep them soft and fluffy without overcooking.
