Cauliflower Kale Puree

A low carb, high fiber alternative to creamy mashed potatoes.

Ingredients

  • 1 head of cauliflower, chopped
  • 2 cups chopped kale, stems removed
  • 1 clove garlic, minced
  • 1 teaspoon kosher salt divided
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup shredded Parmesan cheese, optional

Instructions

  1. In a large pot, bring the chopped up cauliflower to a boil and cook until it is very soft.
  2. While the cauliflower is cooking saute the chopped kale, garlic, and 1/4 teaspoon of kosher salt on medium high heat for 2-3 minutes in a large pan sprayed with cooking spray.
  3. Once the kale has wilted remove it from the heat.
  4. Add the cooked cauliflower to a large bowl, blender, or food processor.
  5. Puree the cauliflower until it is smooth.
  6. Add the remaining salt, pepper, kale mixture, and parmesan cheese to the cauliflower puree and stir together.
