  • 1 head cauliflower chopped, about 2.5-3 pounds
  • 2 ounces cream cheese
  • ¼ cup sour cream
  • ½ teaspoon onion powder
  • teaspoon garlic powder
  • salt to taste
  • black pepper to taste

Instructions

  1. Wash cauliflower and boil until very soft, about 15 minutes.
  2. Drain well. Place cauliflower in a mesh strainer and press to squeeze out as much liquid as possible. (Or squeeze with paper towels).
  3. Using a food processor (or immersion hand blender) puree until smooth. Add in cream cheese, sour cream and seasonings. Blend until smooth.
  4. Place back into the pot and heat on the stove on medium low until heated through.

Notes

  • Carefully drain and press cauliflower after boiling to remove excess liquid for the best texture.
  • Optional toppings such as fresh chives and butter can be added for extra flavor and garnish.
  • Adjust salt and pepper to taste after blending for balanced seasoning.
