Description
Cauliflower Mashed "Potatoes" uses a whole head of chopped cauliflower cooked until tender. After draining the cooked cauliflower rigorously to eliminate water, it is pureed in a food processor with cream cheese, sour cream, and seasonings. Ingredients
- 1 head cauliflower chopped, about 2.5-3 pounds
- 2 ounces cream cheese
- ¼ cup sour cream
- ½ teaspoon onion powder
- ⅛ teaspoon garlic powder
- salt to taste
- black pepper to taste

Instructions
- Wash cauliflower and boil until very soft, about 15 minutes.
- Drain well. Place cauliflower in a mesh strainer and press to squeeze out as much liquid as possible. (Or squeeze with paper towels).
- Using a food processor (or immersion hand blender) puree until smooth. Add in cream cheese, sour cream and seasonings. Blend until smooth.
- Place back into the pot and heat on the stove on medium low until heated through.
Notes
- Carefully drain and press cauliflower after boiling to remove excess liquid for the best texture.
- Optional toppings such as fresh chives and butter can be added for extra flavor and garnish.
