Cauliflower Mashed Potatoes

Cauliflower Mashed Potatoes use steamed or boiled cauliflower pureed with heavy cream, butter, salt, and garlic powder to create a creamy, low-carb alternative to traditional mashed potatoes. The dish has a smooth texture from pureeing and is brightened with fresh chopped parsley and garnished with extra butter, making it a comforting side dish that complements many meals.

Description

This recipe transforms cauliflower into a mashed dish resembling potatoes by cooking the vegetable until tender, then pureeing it with heavy cream, melted butter, kosher salt, black pepper, and garlic powder. This produces a smooth, creamy texture that mimics traditional mashed potatoes without the starch. Fresh parsley is added for color and herbaceous flavor, and additional melted butter can be drizzled over before serving for richness. The cauliflower is cut into similarly sized pieces to ensure even cooking. The recipe can be prepared with fresh or frozen cauliflower, noting frozen cauliflower needs thawing and warming before processing. For a chunkier texture, a potato masher can be used instead of a food processor, depending on preference.

Ingredients

Servings
  • 2 heads cauliflower approximately 4 cups, cut into 1 1/2 inch pieces
  • 1/3 cup heavy cream
  • 3 tablespoons butter melted, plus more for garnish
  • 1 teaspoon kosher salt plus more for garnish
  • 1/4 teaspoon black pepper plus more for garnish
  • 1/4 teaspoon garlic powder
  • 2 tablespoons parsley chopped, fresh

Instructions

  1. Boil or steam the cauliflower until tender. Boiling and steaming directions are both provided in the post.
  2. Drain the cauliflower, and place it into the bowl of a food processor along with the cream, butter, salt, pepper and garlic powder.
  3. Puree until the cauliflower mixture is smooth.
  4. Place the mixture in a bowl. Drizzle with additional melted butter if desired. Add a sprinkle of salt, pepper and parsley, then serve.

Notes

  • Cut cauliflower into uniform pieces for even cooking.
  • Use a food processor for a creamy texture; or a potato masher for a chunkier result.
  • Both fresh and frozen cauliflower work; frozen should be thawed and warmed before use.
