This thin and crispy cauliflower crust pizza topped with a healthy arugula salad makes for a quick, easy, and delicious lunch!

Ingredients
- 1 Milton’s Four Cheese Cauliflower Crust Pizza
- 2 cups arugula
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 cup Thinly sliced red onion
- 1/2 cup cucumber ribbons
- 1/4 tsp salt
- 1/4 tsp chili flakes
- 1/4 tsp ground pepper
Instructions
- Bake Milton’s Four Cheese Cauliflower Crust Pizza according to package directions.
- While the pizza is cooking prep the salad: add arugula, thinly sliced red onion and cucumber ribbons to a bowl.
- Whisk together the olive oil, juice half lemon, salt, pepper and chili flakes. Pour over and mix the salad.
- Remove the pizza from the oven when done cooking and top with arugula salad. Serve immediately.
Notes
- Make sure to serve the pizza immediately topped with the arugula topper!
- This is a great way to enjoy vegetables and pizza together!
