Cauliflower Potato Salad (Keto / Low-carb)

This low-carb cauliflower potato salad mimics traditional potato salad using small cauliflower florets mixed with hard-boiled eggs, celery, green onion, dill pickles, and crumbled bacon. It’s dressed with a creamy mayonnaise-based dressing seasoned with dill, black pepper, celery seed, and salts for a flavorful, chunky salad with the texture of classic potato salad but without the carbs.

Description

The Cauliflower Potato Salad uses tender cauliflower florets cooked until just soft and cooled. They are combined with roughly chopped hard-boiled eggs, diced celery, green onions, dill pickles, and crumbled cooked bacon for texture and savory notes. The dressing is made from mayonnaise mixed with dried dill, ground black pepper, celery seed, seasoned salt, garlic salt, and onion salt to achieve a rich and herbaceous flavor.

The salad is tossed gently to maintain the cauliflower’s texture and chilled before serving to allow flavors to meld. It offers a satisfying and creamy alternative to traditional potato salad for those on low-carb or keto diets, retaining familiar textures and tastes with less starch.
