Cauliflower Salad

Cauliflower Salad combines crisp cauliflower florets with chickpeas, red pepper, red onion, and fresh mint in a tahini and lemon dressing seasoned with cumin and dried mint. The dressing softens the cauliflower while providing a nutty, bright, and aromatic complement. This salad is hearty yet refreshing, with a balance of creamy, citrusy, and earthy flavors suited for a wholesome side dish.

Description

This salad starts by whisking together a dressing of lemon juice, extra-virgin olive oil, tahini, ground cumin, dried mint, salt, and black pepper. The combination imparts citrus brightness, nuttiness from the tahini, and fragrant herbal notes. The cauliflower florets are then tossed in this dressing to begin softening and absorbing flavors.

Chickpeas add a creamy, protein-rich element, while diced red peppers and red onion contribute sweetness, crunch, and sharpness. Fresh mint scattered throughout adds freshness and lifts the overall flavor. The salad is not cooked, so the texture remains crisp with just enough softness from the marinating dressing.

This cauliflower salad works well as a light and satisfying side to grilled meats or as a vegetarian-friendly dish. The tahini dressing gives it a creamy texture without dairy, and the spices bring complexity. It also holds well for serving chilled or room temperature.
