Cauliflower steaks are a really great vegan entree. I love to make sure they are alllmost burnt.

Ingredients
- 1 garlic finely grated on a microplane, small clove
- lemon juice of 1
- ¼ cup tahini
- kosher salt to taste
- water as needed, cold
- 1 cauliflower leaves and stem trimmed, large head
- black pepper to taste, freshly ground
- 4 tablespoons olive oil divided
- sea salt such as Maldon, for sprinkling, flaky
- 2 tablespoons pine nuts toasted
- ¼ cup pomegranate arils
- ¼ cup cilantro leaves torn, or mint leaves, fresh
