Cauliflower steaks are a really great vegan entree. I love to make sure they are alllmost burnt.

  • 1 garlic finely grated on a microplane, small clove
  • lemon juice of 1
  • ¼ cup tahini
  • kosher salt to taste
  • water as needed, cold
  • 1 cauliflower leaves and stem trimmed, large head
  • black pepper to taste, freshly ground
  • 4 tablespoons olive oil divided
  • sea salt such as Maldon, for sprinkling, flaky
  • 2 tablespoons pine nuts toasted
  • ¼ cup pomegranate arils
  • ¼ cup cilantro leaves torn, or mint leaves, fresh
