Cauliflower Tacos
Description
Cauliflower Tacos are prepared by chopping a medium head of cauliflower into similarly sized florets, tossing them with avocado oil and a homemade taco seasoning blend including chili powder, cumin, paprika, and other spices. Roasting the florets at 400°F results in tender pieces with a slight char that enhances their natural flavor. The tacos are assembled on corn tortillas with a smooth avocado crema combining avocado, Greek yogurt, lime juice, and fresh cilantro to add richness and tang. Additional toppings such as shredded red cabbage and pico de gallo provide crunch and fresh acidity, while more cilantro adds herbal brightness. This recipe balances spice, creaminess, and fresh vegetable notes.
