Ceviche

Ceviche is a refreshing dish of fresh diced white fish "cooked" in lime and lemon juice, combined with crisp vegetables and herbs for bright flavor. The acid cures the fish by turning it opaque and firm while adding tartness, which balances the juicy tomatoes, cool cucumber, creamy avocado, spicy jalapeño, pungent onion, and fresh cilantro.

Description

This ceviche recipe uses fresh firm white fish such as sea bass, snapper, or halibut, cut into small pieces and marinated in freshly squeezed lime and lemon juice for 30 minutes up to 4 hours in a glass, non-reactive bowl. The acid in the citrus juice chemically cooks the fish, changing its texture to tender and opaque.

After marination, diced Roma tomatoes, peeled and diced cucumber, avocado, small pieces of red onion and jalapeño, chopped cilantro, and kosher salt are gently folded in to create a balanced mixture featuring acidity, heat, creaminess, crunch, and herbaceous notes.

The ceviche can be served chilled in individual glasses, on plates, or alongside tortilla chips as an appetizer or light meal option, highlighting fresh ingredients and sharp citrus flavor combined with subtle heat from the jalapeño.

  • 1 pound white fish skinned, deboned and diced into small pieces, fresh firm, like sea bass, snapper, or halibut
  • ½ cup lime juice from about 5 to 6 limes, fresh
  • 3 tablespoons lemon juice from 1 lemon, fresh
  • 2 Roma tomato diced
  • 1 cucumber peeled and diced
  • 1 avocado peeled, deseeded and diced
  • ½ red onion diced, small
  • 1 jalapeno pepper seeded and finely diced
  • ½ bunch cilantro chopped
  • 1 teaspoon kosher salt

Instructions

  1. In a glass (non-reactive) bowl, stir together the fish, lime juice, and lemon juice, Cover the bowl and marinate in the fridge for 30 minutes to 4 hours. You'll notice the fish go opaque as the lime juice "cooks" the fish. The longer you marinate the fish, the more it will cook. See above in the blog post for more information.
  2. Remove the fish from the fridge (no need to drain it) and add the tomatoes, cucumber, avocado, red onion, jalapeno pepper, cilantro, and salt. Gently stir to combine.
  3. Serve it up in individual glasses, on a plate, or with tortilla chips.
