Champagne Jello Shots
Description
This recipe uses lemon-flavored sparkling water, sugar, water, and gelatin gently heated to dissolve the gelatin, then cooled slightly before stirring in brut sparkling wine and vodka. The mixture is poured into shot glasses or a baking dish and chilled until set. The shots retain a slight tackiness on top and can be decorated with sprinkles for visual appeal.
The sparkling wine and vodka provide the alcoholic content, while the gelled base creates a firm yet slightly bouncy texture typical of gelatin desserts. The lemon sparkling water adds a citrus note that complements the bubbles of the wine and vodka. The resulting jello shots are a playful and colorful serving option at gatherings.
Shots can be served chilled straight from the fridge, while the gelatin can also be cut into shapes using cookie cutters for decorative versatility. Decorating with festive sprinkles enhances their presentation. This recipe also allows for substituting sparkling cider for a non-alcoholic version.
Ingredients
- 1 cup sparkling water lemon flavored
- 1/4 cup sugar , optional
- 1/2 cup water
- 2 gelatin packets, ½ ounce
- 3/4 cup brut sparkling wine
- 1/4 cup vodka
Instructions
- In a small saucepan over low heat, whisk together lemon sparkling water, sugar, tap water and gelatin. It will be a little frothy, this is normal. Wait for it to die down.
- Reduce heat to low, whisking constantly. Remove from heat right before the mixture starts to simmer.
- Stir in sparkling wine and vodka.
For shots:
- Distribute the liquid evenly among shot glasses, and place in the refrigerator for 3 hours to set.
- After they have set, the tops will still be tacky, top with festive sprinkles.
For cutouts:
- Coat an 8x8 or 9x9 baking dish with cooking spray.
- Pour liquid into baking dish and chill for 3 hours or until set.
- When ready to make cutouts, gently release edges using a butter knife. Invert onto a cutting board lined with parchment to prevent sticking.
- Using 1-2 inch cookie cutters, make desired shapes and decorate with festive sprinkles.
