Description

This recipe uses pork baby back ribs rubbed with a marinade combining sugar, salt, five spice powder, white pepper, sesame oil, Shaoxing wine, soy sauce, hoisin sauce, molasses, garlic, and optional red food coloring for authentic color. After coating the ribs and allowing at least two hours to marinate (ideally overnight), the ribs are roasted at 400°F on a rack with water beneath to keep moisture. Halfway through cooking, they are basted with reserved marinade to build layers of flavor and a sticky glaze.

The ribs develop a tender texture with a caramelized, slightly sticky exterior typical of char siu. The marinade imparts a blend of sweet, salty, slightly spicy, and aromatic notes. Resting post-roast lets juices redistribute before slicing.

  • 3 pounds baby back ribs (1.4 kg)
  • 1/4 cup sugar (50g)
  • 2 teaspoons salt
  • 1/2 teaspoon five spice powder
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon sesame oil
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 2 teaspoons molasses
  • 1/8 teaspoon red food coloring (optional)
  • 3 cloves garlic (finely minced)

Instructions

  1. Rinse the ribs and thoroughly pat them dry with paper towels. Mix the rest of the ingredients (the sugar, salt, five spice powder, white pepper, sesame oil, shaoxing wine, soy sauce, hoisin sauce, molasses, food coloring—if using, and garlic) in a bowl to make the marinade.
  2. Reserve about ⅓ of the marinade, and rub the ribs with the rest of it. Allow the ribs to marinate for at least 2 hours. For best results, allow to marinate overnight. 
  3. Preheat your oven to 400 degrees, and put the ribs on a rack resting on a baking sheet. Pour 1 cup water into the pan, and transfer to the oven. Roast for 30 minutes.
  4. Remove the ribs from the oven and baste with the marinade. Return to the oven and roast for another 30 minutes.
  5. Allow the ribs to rest for 5 minutes. Slice and serve!

Notes

  • Allow marinating for at least 2 hours; overnight marinating improves flavor penetration.
  • Active prep time is approximately 10 minutes; account for marinating in overall time.
  • Use a rack over a baking sheet with water to keep ribs moist during roasting.
