Description

This recipe starts with cooking aromatic vegetables—onion, celery, and garlic—in olive oil until softened. Bite-sized chicken breast pieces are then browned with poultry seasoning to add savory depth. The cooked vegetables are returned to the pan along with uncooked rice, tomato products, chicken broth, fresh parsley, and Tabasco sauce for a mild spicy note.

After bringing the mixture to a boil, it's covered and simmered gently until the rice is tender and most liquid has been absorbed. Ingredients

  • 1 onion chopped, medium
  • 2 ribs celery diced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 chicken breast cut into bite-size pieces
  • 1 teaspoon poultry seasoning
  • 1 ½ cups long grain rice uncooked
  • 3 cups chicken broth
  • 1 tablespoon parsley chopped, fresh
  • 12 dashes Tabasco sauce
  • 14.5 ounces tomato diced with juice
  • 8 ounces tomato sauce

Instructions

  1. Heat 1 tablespoon of the olive oil in a large pan over medium-high heat.
  2. Add the onion, celery and garlic and cook until tender.
  3. Remove from pan and set aside.
  4. Add the remaining tablespoon of oil and chicken.
  5. Sprinkle poultry seasoning over chicken in pan.
  6. Cook, stirring frequently, until chicken is no longer pink and has a light brown color.
  7. Add reserved onion mixture back to the pan with the chicken.
  8. Add all remaining ingredients and stir well to combine.
  9. Bring mixture to a boil, then reduce heat to low, cover and cook 25 to 30 minutes or until most of the liquid is absorbed and the rice is tender.
