Cheddar and Bacon Puffs Recipe

Cheddar and Bacon Puffs are savory choux pastry bites filled with grated cheddar cheese and crispy bacon pieces. The dough is prepared by cooking a butter-milk mixture with flour to form a pan dough, then beaten eggs are incorporated to create a smooth batter. The addition of cheddar and bacon provides a rich and smoky flavor, with a crisp golden exterior and a tender, hollow interior ideal for snacking or appetizers.

Description

This recipe starts by bringing milk or water, butter, and salt to a boil, then vigorously stirring in flour until a dough forms and pulls away from the pan. After cooling slightly, eggs are beaten in one at a time to create a smooth, pipeable batter. Grated sharp cheddar cheese and coarsely chopped cooked bacon are folded in, along with black and cayenne peppers for seasoning.

The dough is dropped by spoonfuls onto parchment-lined baking sheets, smoothed to avoid sharp peaks, and baked at 425º F until puffed and golden. The result is airy puffs with a crisp exterior and a savory filling from the cheese and bacon. These puffs suit serving warm as appetizers or snacks.

Ingredients

Servings
  • 1 cup milk or water
  • 1/2 /2 cup butter cut into pieces, unsalted
  • 1/2 /2 teaspoon kosher salt
  • 1 cup all-purpose flour
  • 4 large egg room temperature
  • 1 cup cheddar cheese packed, coarsely grated
  • 4 lices Bacon coarsely chopped, cooked
  • 1/4 /4 teaspoon black pepper ground
  • pinch cayenne pepper

Instructions

  1. Preheat oven to 425º F. Line baking sheet pans with parchment paper or silicon baking mats.
  2. Bring milk (or water), butter, and salt to a rolling boil in a medium, heavy- bottomed saucepan over medium-high heat. Stirring vigorously, add in all of the flour, and cook until the dough begins to pull away from the edges of the saucepan. Remove dough from heat and transfer to the bowl of a stand mixer and allow to cool for approximately two to three minutes. Alternately, you can leave in the saucepan and use a hand mixer, if desired. Add in eggs, one at a time, beating in completely after each addition. Stir in cheese, bacon pieces, black pepper, and red pepper, making sure all ingredients are well-combined.
  3. Scoop tablespoon pieces onto baking sheet. Using a damp finger or back of a spoon, press down any pieces of dough that are sticking up to prevent them from overbrowning. Bake 25-30 minutes, until puffs have turned a golden brown. Remove from the oven and allow to cool slightly.
  4. Serve immediately or allow to cool completely, place in airtight container or zip top freezer bags and freeze up to three months.
