Cheddar Bay Biscuits
Description
Cheddar Bay Biscuits begin by combining all-purpose flour with sugar, baking powder, garlic powder, onion powder, and salt. Separately, lukewarm buttermilk is whisked with melted butter, then gently folded into the dry ingredients just until no flour streaks remain. Sharp cheddar cheese is folded into the dough, which is then portioned into 12 evenly sized mounds spaced on a parchment-lined baking sheet. Baking at 425°F for 15-16 minutes yields biscuits with a golden crust and tender crumb.
While baking, a seasoned butter topping made from melted butter combined with fresh chopped chives and garlic powder is prepared. Once out of the oven, the biscuits are brushed with this topping immediately, which adds extra buttery richness and a fresh herb note. The texture of these biscuits is soft and fluffy on the inside with a lightly crisp exterior.
These biscuits complement rich dishes well and are especially good with beef stews or hearty soups where their soft texture soaks up sauces. Using freshly grated cheese enhances the flavor and texture compared to pre-shredded options.
Employing an ice cream scoop helps form evenly sized biscuits that bake uniformly. For rounder biscuits, dampen your hands and gently roll the dough into balls before baking. Alternatively, roll out the dough and cut with a biscuit cutter for a traditional shape.
Ingredients
For the Biscuits
- 2 cups all-purpose flour
- 1 TB granulated sugar
- 1 TB baking powder
- 2 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp table salt
- 1 cup buttermilk lukewarm
- ½ cup butter melted
- 1 ½ cup cheddar cheese shredded, sharp
For the Butter Topping
- 3 TB butter melted
- 1 TB chives freshly chopped
- ½ tsp garlic powder
Instructions
- Preheat oven to 425F. Line a baking sheet with parchment paper and set aside.
- In a bowl, combine flour, sugar, baking powder, garlic powder, onion powder, and salt. Set aside.
- In another bowl, whisk together the buttermilk and butter. Use a rubber spatula to gently fold flour mixture with the butter mixture just until no flour streaks remain; small lumps are fine. Gently fold in the cheese.
- Form dough into 12 evenly sized mounds and place them 2-inches apart on prepared baking sheet.
- Bake for 15-16 minutes or just until golden brown. While biscuits are baking, make the butter topping by combining butter, chives, and garlic powder in a small bowl.
- Once biscuits are done baking, gently brush the tops with butter mixture and serve immediately.
Notes
- Freshly grate sharp cheddar from a block for better flavor and texture than pre-shredded cheese.
- An ice cream scooper helps create uniformly sized drop biscuits that bake evenly.
- Dampen hands slightly to roll dough into smooth balls for a more polished biscuit appearance.
- Alternatively, roll dough to 1¼" thickness and cut with a 2½" biscuit cutter for round biscuits.
- Serve these biscuits with rich stews or soups to soak up flavorful sauces.
