Description
This soup begins by boiling a mixture of water, carrots, celery, and green onions to extract a mild vegetable flavor. Separately, butter is melted and combined with onions and flour to form a roux. Milk and chicken broth are brought to a boil before being whisked into the roux to create a creamy base. The cooked vegetables along with Kraft Old English Cheddar Cheese Spread are added into the soup, which is seasoned with salt, black pepper, cayenne pepper, and prepared mustard. Ingredients
- 2 cups water
- 1/3 cup carrot finely chopped
- 1/3 cup celery finely chopped
- 1 cup green onion finely chopped
- 1/2 cup butter
- 1 cup onion white, chopped
- 1/4 cup all-purpose flour
- 4 cups milk
- 4 cups chicken broth
- 15 ounces cheddar cheese spread pasteurized processed
- salt to taste
- black pepper to taste
- 1/4 teaspoon cayenne pepper
- 1 tablespoon prepared mustard
Instructions
- Place the water, carrots, celery, and green onions in a medium pot over high heat. Bring to a boil for 5 minutes over high heat. Set aside, but do not drain.
- Melt the butter in a large stockpot over medium heat. Add the onion and sauté for 1 minute. Then add the flour and stir.
- In a large saucepan, bring the milk and broth to boil.
- Whisk the broth mixture into the flour mixture. Then add the rest of the ingredients, as well as the boiled vegetables and the water in which they were cooked. Bring to a boil and serve immediately.
Notes
- Use Kraft Old English Cheddar Cheese Spread for the best flavor and consistency in this soup.
