Cheddar-Chive Drop Biscuits

Cheddar-Chive Drop Biscuits are made by mixing all-purpose flour with baking powder, baking soda, sugar, seasonings, cold butter, shredded cheddar cheese, and fresh chives, then adding buttermilk to form a soft dough. The biscuit dough is dropped by spoonfuls onto a baking sheet and baked until golden. The result is a tender, flaky biscuit with a cheesy flavor and fresh herb notes, suitable for savory breakfasts or sides.

Description

This recipe for Cheddar-Chive Drop Biscuits combines dry ingredients including flour, sugar, baking powder, baking soda, salt, freshly ground black pepper, and garlic powder. Cold, cubed unsalted butter is cut into the flour mixture until it resembles coarse crumbs. Shredded triple cheddar cheese and fresh chopped chives add flavor and color.

Buttermilk is then incorporated, and the dough is tossed until it just comes together, yielding a batter-like dough that can be spooned onto a baking sheet. The biscuits bake at 425°F for about 12 to 15 minutes until golden on top.

The biscuits have a tender crumb with cheesy richness balanced by the subtle bite of chives and a hint of garlic. They are ideal served warm for breakfast or alongside soups, stews, and salads.

If the dough seems dry at first, adding a tablespoon or two more buttermilk while mixing helps bring it together without overworking the dough.

Ingredients

Servings
  • 2 cups (283g) all-purpose flour (scoop and level to measure)
  • 2 tsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground
  • 1/4 tsp garlic powder
  • 1/2 cup (113g) unsalted butter cold and diced into small cubes
  • 1 cup (4 oz) shredded triple cheddar cheese Cache Valley Creamery brand
  • 3 Tbsp chives chopped fresh
  • 1 cup (235ml) buttermilk

Instructions

  1. Preheat oven to 425 degrees. Line a rimmed 18 by 13-inch baking sheet with parchment paper, set aside.
  2. In a large mixing bowl whisk together flour, sugar, baking powder, baking soda, salt, pepper and garlic powder Add butter and cut into mixture using a pastry cutter or long pronged fork until mixture resembles coarse meal.
  3. Add in cheddar cheese and chives and toss mixture. Pour in buttermilk and toss until mixture comes together*.
  4. Scoop dough out 1/4 cup (lightly heaping) at a time. Run a butter knife around the sides of the dough along the measuring cup, then shake to drop onto parchment.
  5. Repeat with remaining dough, while spacing evenly apart and fitting 12 biscuits on the baking sheet. Bake in preheated oven until tops are golden, about 12 - 15 minutes. Serve warm.

Notes

  • If the dough feels dry, add 1-2 tablespoons of buttermilk while mixing to achieve the right consistency.
  • Use cold butter diced into small cubes to create a flaky texture.
  • Serve the biscuits warm for best flavor and texture.
