Description

  • 1 cup cornmeal white or yellow
  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 Tbsp honey
  • 4 ounces butter cut into pieces, cold
  • 1 cup milk or buttermilk, 2%
  • 3/4 cup cheddar cheese lightly packed, shredded

Instructions

  1. Preheat oven to 450°F and lightly butter a baking sheet.
  2. Add the cornmeal, flour, baking powder, baking soda, salt, honey, and butter to the bowl of a food processor. Pulse until everything is combined.
  3. Slowly add in the milk and continue to pulse until the dough comes together, it may be a bit wet and sticky.
  4. Remove the dough to a lightly floured surface and mix in the cheddar by hand, knead a few times until it's no longer very sticky. Pat it into a rectangle about 1 inch thick, and cut out 8-10 biscuits with a 2 1/2 inch biscuit cutter.
  5. Place the biscuits on your baking sheet, and bake at 450°F for 5 minutes. Then, turn the oven down to 400°F and bake for about 8-10 more minutes. Remove from the oven and allow the biscuits to cool on a baking rack.
