Cheddar, Ham and Homemade Mango Chutney Grilled Cheese Sandwiches

Our ideal grilled cheese sandwich combines gooey, melted cheddar, sweet homemade mango chutney and salty ham between two slices of country bread, grilled until crisp and golden brown. It's heavenly.

Ingredients

  • 4 pullman bread thick-cut slices, good quality
  • 4 Rustic bread thick-cut slices, good quality
  • 2 tablespoons butter room temperature, unsalted
  • 4 tablespoons mango chutney homemade or good store-bought
  • 4 lices ham we like Bistro or Paris-style ham, good quality
  • 1 1/2 cups cheddar cheese 3 ounces (we recommend a 1:1 mix of Cabot Medium Cheddar and Cabot Pepper Jack, grated

Instructions

  1. Lay the bread on a work surface and spread each slice evenly with 1/2 tablespoon butter. Turn the slices over and spread each one with a heaping tablespoon of the chutney. Divide the cheese between the 4 slices. Add the ham to 2 of the slices and place the remaining bread on top of each sandwich.
  2. Heat a large skillet on medium-low and add the sandwiches. Place a moderately heavy skillet on top of the sandwiches and cook until the bread is golden brown on the bottom, about 4 minutes.
  3. Flip the sandwiches, replace the skillet and cook until the other side is brown and the cheddar is melted, 3 to 4 minutes longer.
  4. Place the sandwiches on a cutting board and cut each one in half diagonally. Serve hot.
