Cheese Ball Bites

These cheese ball bites are small rounds made from a mixture of cream cheese, mascarpone, and finely grated sharp white cheddar. The balls are rolled in chopped pecans, dried cranberries, or fresh herbs for a mix of textures and flavors. The bite-sized portions are chilled and ready for serving as appetizers.

Description

Cheese Ball Bites start by blending softened cream cheese and mascarpone to form a smooth base. Adding sharp white cheddar introduces depth and a slightly tangy flavor. Salt and pepper adjust seasoning.

The mixture is shaped into small balls, then coated separately in finely chopped pecans, sweet dried cranberries, or a mix of chives and parsley. This variety offers nutty, sweet, and herbal flavor profiles and differing textures.

Chilling the cheese balls before serving firms them up and helps the coatings adhere. These can be made hours ahead, allowing flexibility for entertaining or meal prep.

The notes emphasize finely chopping toppings for better adhesion and recommend removing the balls from the fridge about ten minutes before serving to soften slightly.
