Ingredients

  • 120 g plain flour
  • 120 g butter softened
  • 90 g cheddar cheese grated
  • 30 g parmesan grated
  • 5 g rosemary finely chopped, fresh

Instructions

  1. Preheat your oven to 190°C/170°C(fan)/375°F/Gas 5.
  2. Put all the ingredients into a large mixing bowl. Mix together until a dough is formed.
  3. Transfer the dough to a floured surface. Roll out to 5mm thick.
  4. Use a cookie cutter to cut the dough into circles about 5cm/2inch in diameter.
  5. Lightly flour a large baking tray and put the dough disks onto it.
  6. Bake for 12 minutes. Allow to cool on a wire rack.

Notes

  • Mix the dough just until combined to ensure the biscuits remain tender, avoiding over-mixing.
  • Use any preferred cookie cutter shapes; stars and rounds both work well for these cheese biscuits.
