Cheese Bitterballen - delicious deep fried Dutch croquettes filled with cheese, crunchy on the outside and soft and gooey on the inside!

Ingredients
- 100 gms butter ½ stick
- 110 gms all-purpose flour ¾ cup
- 500 ml milk 2 cups
- ½ tsp nutmeg
- 3 gelatin sheets I used 2 sheets only, or 2 tsp gelatin powder
- 80 gms aged cheese I used Parmigiano Reggiano, 3 oz
- 80 gms soft cheese camembert or Nije kaas (I used camembert, 3 oz., like brie
- 80 gms matured cheese I used provolone piquant, 3 oz
- 2 egg yolk
- 80 ml cream 1/3 cup
- salt to taste
- black pepper to taste
- egg beaten
- flour
- breadcrumbs
- vegetable oil for deep frying
Notes
- These Bitterballen can be frozen (before being fried) and stored for about 1 month. They can be fried from frozen by cooking them for a minute longer.
