Ingredients

  • 100 gms butter ½ stick
  • 110 gms all-purpose flour ¾ cup
  • 500 ml milk 2 cups
  • ½ tsp nutmeg
  • 3 gelatin sheets I used 2 sheets only, or 2 tsp gelatin powder
  • 80 gms aged cheese I used Parmigiano Reggiano, 3 oz
  • 80 gms soft cheese camembert or Nije kaas (I used camembert, 3 oz., like brie
  • 80 gms matured cheese I used provolone piquant, 3 oz
  • 2 egg yolk
  • 80 ml cream 1/3 cup
  • salt to taste
  • black pepper to taste
  • egg beaten
  • flour
  • breadcrumbs
  • vegetable oil for deep frying

Notes

  • These Bitterballen can be frozen (before being fried) and stored for about 1 month. They can be fried from frozen by cooking them for a minute longer.
