Description

After initial baking to lightly toast the tortilla, a layer of shredded Colby Jack cheese and diced green chiles is added. The dish returns to the oven briefly to melt the cheese, forming a gooey, spicy topping on a crisp, golden tortilla base.
Cut into pieces, Cheese Crisps can be served warm as a snack or appetizer. The layering of butter and cheese on the tortilla delivers both richness and texture contrast, while green chiles add a subtle kick.
Leftovers keep well in an airtight container in the fridge for 2-3 days or can be frozen up to 1-2 months. Reheating is best done in the oven to retain crispiness; microwaving may soften them.
Ingredients
- 2 large flour tortilla at east 13inch diameter, burrito-sized
- ¼ cup butter
- 1½ cups Colby jack cheese shredded
- ¼ cup diced green chiles
Instructions
- Preheat your oven to 350°F with a rack in the middle.
- Butter the tortilla making sure to cover the entire surface and place it on a large, foil-lined baking sheet. Bake for about 5-10 minutes or until the tortilla is toasted.
- Remove it from the oven and sprinkle with ¾ cup cheese and diced green chiles. Return to oven and bake for an additional 2-3 minutes or until the cheese has melted.
- Take out, cut up, and enjoy warm. Repeat with additional cheese crisps.
Notes
- Store leftover cheese crisps in an airtight container in the refrigerator for 2-3 days or freeze in a Ziploc bag for 1-2 months.
