Cheese Crisp

Cheese Crisp is a simple baked snack made by toasting large flour tortillas coated with butter, then topped with shredded Colby Jack cheese and diced green chiles, baked until the cheese melts and the tortilla turns crisp. This creates a crunchy, cheesy treat with a mild heat from the green chiles.

Description

The Cheese Crisp starts by buttering large flour tortillas to ensure even toasting and crispness. After initial baking to lightly toast the tortilla, a layer of shredded Colby Jack cheese and diced green chiles is added. The dish returns to the oven briefly to melt the cheese, forming a gooey, spicy topping on a crisp, golden tortilla base.

Cut into pieces, Cheese Crisps can be served warm as a snack or appetizer. The layering of butter and cheese on the tortilla delivers both richness and texture contrast, while green chiles add a subtle kick.

Leftovers keep well in an airtight container in the fridge for 2-3 days or can be frozen up to 1-2 months. Reheating is best done in the oven to retain crispiness; microwaving may soften them.
